Yakitori, or Japanese grilled chicken skewers, is one of the country’s most beloved comfort foods. Small pieces of chicken—sometimes meat, sometimes skin, liver, or other parts—are carefully skewered and grilled over charcoal, giving them a smoky, irresistible flavor. Each skewer is usually seasoned either with “tare,” a sweet-savory soy-based sauce, or simply with salt, allowing the natural taste of the chicken to shine.
