Curbside 8 is stationed between More Hall and the Mechanical Engineering Building on the path to Hec Edmundson Pavilion, alongside the Siganos food truck. It will be open from 10 a.m. to 3 p.m. Monday through Friday.

Curbside 8 is “an open-air market” style of food truck, Housing & Food Services says. Its menu, which will be changed every week, will feature a special dish in each of five lighthearted menu categories: Pressed Sammies; Comfort Classics, Simmered, Stirred & Stewed; Sweet Satisfaction and Ad Hoc. This weeks menu, for instance, boasts a Garlic-Rosemary-Chipotle Grilled Chicken Sammie, Pizza Pot Pie, Mashers & Andouille Sausage Gravy and Tuscan-style White Beans. Oh, and for dessert, banana waffle bread pudding.

Each dish will celebrate “a broad range of culinary influences,” HFS says. “You may see an authentic pressed Cuban sandwich or banana waffle bread pudding on the menu one week, and discover Tuscan white bean stew with herbed goat cheese toasts the next.”
