Hindi assimilation patterns

I need to record a few native Hindi speakers in a sound proof booth,
using a microphone.  I will also need to use sound editing software to
clip parts of the signal, and do some other type of editing (do you have
any software where I can see the spectrograms and wave forms of the speech
signal at the same time?)
